Ingredients

  • 180g dark vegan chocolate chips
  • 70g plant-based buttery spread
  • 2 tablespoons syrup (golden, maple or other)
  • 50g gluten free porridge oats
  • 100g gluten free Granola (any flavour)
  • 60g dried fruit (we used cherries)
  • 10g popcorn for bulk
  • A sprinkle of icing sugar to decorate

Directions

  1. Start by gently heating the porridge oats in a dry frying pan until they brown slightly and release a nutty scent. (Be careful not to burn them! It can happen very quickly)
  2. Chop the dry ingredients such as the cherries and popcorn into manageable pieces. Combine all of these into a bowl.
  3. Pop the chocolate, syrup and buttery spread into a bowl and heat in a microwave, checking every 30 seconds until it is melted. Give it a good stir. Gradually pour it over the dry ingredients and stir to ensure they are covered in the chocolate mix. If it is very wet add a few more handfuls of dry goodies.
  4. Press the mix into a loaf tin lined with greaseproof paper and chill in the fridge for an hour or so.
  5. Sprinkle the top with icing sugar and cut into cubes or slices.
