Staffordshire Oatcakes

  • 4 tablespoon of gluten free¬†oat flour
  • 2 x eggs
  • 4 tablespoon Greek yogurt
  • Optional: a pinch of salt for savoury or a pinch of sugar for sweet


  1. Beat the 2 eggs in a bowl then blend in Greek yogurt.
  2. Mix in the oat flour and optional salt/sugar.
  3. Place a tablespoon of vegetable oil in a frying pan and heat on the hob at a medium heat setting.
  4. When the oil is hot, pour half the batter into the frying pan and spread evenly into a thin layer around the frying pan.
  5. Cook until golden brown on the base, then flip with a spatula and cook on the other side. (Please note there may be some wet mix on top of the oatcake when flipping it over.)
  6. Serve immediately with chosen topping; savoury cheese spread or sweet maple syrup.
