  • 2 cups of gluten free plain flour
  • 1½ teaspoons of salt
  • 2½ teaspoons of olive oil
  • 200ml water
  • 1 teaspoon xanthan gum


  1. In a bowl, add the plain flour, salt, olive oil and xanthan gum to form a dough and knead for 5 minutes. Note: If too dry; add a little oil to make it more workable.
  2. Divide the dough into walnut sized pieces and roll in-between your palms.
  3. On a floured surface, press flat and roll out the pieces into 7cm discs.
  4. Place the filling in the middle. Foldover and with a little ‘pastry glue’ seal the edges and press with a fork. Make several patties and heat the oil in a saucepan and fry till golden.
