Chocolate Covered Strawberry Brownies

Ingredients

170g dairy free butter 
250g coconut sugar (can sub for caster or brown sugar)
85g cocoa powder
1 tsp vanilla extract
90g PureOaty gluten free oats blended into an oat flour 
80-100g chopped dark chocolate 
2 eggs 

For the topping:
100-200g sliced strawberries 
100g dark chocolate

Directions

  1. Preheat the oven to 180C. Line a brownie tray with baking paper and set aside. 
  2. Warm the butter until it’s melted and add in the sugar. Mix well and fold in the cocoa powder. 
  3. Add in the eggs, vanilla, oat flour and mix until smooth. Fold in the chopped chocolate and mix once again. Pour the mixture into your lined tray and make sure it spreads evenly. 
  4. Bake at 180C for 25-30 minutes. Leave to cool fully before decorating.
  5. Layer the strawberries on top of the cooled brownie. Melt the chocolate in the microwave or on a bain-marie and then drizzle this over the top. Put the brownie in the fridge for 30 minutes for the chocolate to set before slicing and serving.
