Ingredients

For the pancake mixture:

150g gluten free oats (blended into oat flour)

2 eggs

160ml Pure Oaty Creamy and Enriched oat drink

½ tsp baking powder

1 tsp cinnamon 

1 tbsp maple syrup

For the caramelised apple topping:

1 red apple

2 tbsp maple syrup 

1 tbsp coconut oil

1 tsp cinnamon

Directions

  1. Blend your oats into a fine oat flour and add this to your bowl. Add in the rest of the ingredients and mix into a smooth batter. Pour the mixture into a lightly greased pan and cook for a few minutes on each side until golden brown. 
  2. For your caramelised apple topping, add the coconut oil, maple syrup and cinnamon to a pan. Melt the coconut oil and mix this well. Add the chopped apple to this mixture and cook until the apple is coated in the caramelised sauce. Do not cook this on a high heat as it will burn easily. 

Stack your pancakes high, add a few spoonfuls of the caramelised apples and add a sprinkling of PureOaty granola for some extra crunch! Enjoy!
