Banana maple pancakes

For something quick and easy that will set you up for the day and a change for our delicious Glebe farm breakfast cereals, these pancakes are delicious and will deliver long lasting energy. You can even take a couple to work old and warm them in the microwave for a filling snack. Any of our NHS and keyworker heroes could keep a stack of them in the fridge for when you get home after a long shift, 30 seconds in the microwave and a drizzle of syrup = instant comfort food!

Ingredients:

 2 eggs
 2 small ripe bananas
 1 tsp bicarbonate of soda
 100g Glebe Farm Gluten free Maple and Banana Granola
 Oil for frying

Directions:

Beat the 2 eggs in a bowl and add the 2 bananas – whizz with a stick blender if you have one or mash them up good and stir well! Lumps are OK but try to blend the two.

Stir in the Bicarbonate of soda and lastly the granola.

Heat up a non-stick frying pan and make sure it has a little oil in it to avoid sticking.

Over a med-low heat spoon in the mixture into circles – it should be thick enough to spread slowly but keep a rough circular shape! You can choose how big you’d like them. When you spot a few bubbles on the top carefully test to see if they are firm enough to flip. Flip them over and wait until the pancakes goa bit puffy, press them to see if they are bouncy which means they are cooked through.

Serve hot with a generous drizzle of maple syrup.
