Banana Maple Pancakes

Ingredients

  • 2 eggs
  • 2 small ripe bananas
  • 1 teaspoon of bicarbonate of soda
  • 100g gluten free maple & banana granola
  • A glug of oil for frying

Directions

  1. Beat the 2 eggs in a bowl and add to a blender with the 2 bananas – whizz until smooth.
  2. Stir in the bicarbonate of soda and lastly the granola.
  3. Heat up a non-stick frying pan with a little oil.
  4. Over a medium/low heat, spoon in the mixture into circles – it should be thick enough to spread slowly but keep a rough circular shape! When you spot a few bubbles on the top carefully test to see if they are firm enough to flip. Flip them over and wait until the pancakes goa bit puffy, press them to see if they are bouncy which means they are cooked through.
  5. Serve hot with a generous drizzle of maple syrup.
